I just love this casserole – SO very fast and easy – and bread-y. My friend Carmen made it one time, and I fell in love. She adapted it from a Sandra Lee recipe, and I adapted it from Carmen. 🙂
- 2 cans refrigerated biscuits, cut into fourths
- 1 lb ground beef, cooked and seasoned (may cook with onions and bell peppers) ((I always fry and freeze extra so I can throw together a casserole like this in no time!))
- 1 jar of salsa (I recently used Kroger’s Medium salsa and it was my favorite in this recipe)
- 1/2 or 1 can diced tomatoes (if you want more than what’s in the salsa – I left this out last time)
- Grated Cheese – as much or as little as you want. (we like a lot)
Layer ingredients in a greased 9×13 casserole dish. Bake at 350 for 20-30 minutes (when the biscuits are done, the casserole is done). Serve with a side salad, and enjoy your fast, easy, and delicious non-low-carb-friendly dinner! 🙂
PS: We ate it before I remembered to take a picture! I’m already looking forward to making it again! (I just wonder what state I’ll live in the next time I cook it???) 🙂
