Happy Friday, y’all!
You know how I love a good (but easy) recipe. Well, today, BooMama is hosting a “Diptacular” recipe collection – all different flavors of dips. Even the titles of these recipes are making me hungry! I linked to my Spinach & Bacon Rotel Dip (previously posted). But in case you’d like the recipe again, here it is:
Easy Spinach Rotel Dip
1 lb. Velveta cheese – cut into cubes
4 oz cream cheese – cut into cubes
1 can RoTel tomatoes – undrained
8 slices of bacon – cooked and crumbled (may substitute “Real Bacon” bits)
Combine in microwave bowl and heat for 5 minutes, stirring after each minute. Transfer to a small slow cooker (like the Crock Pot “Little Dipper”) to keep warm. Serve with tortilla chips or crustini.

Dear Jennifer, I just read your comment on SaraMae's blog and felt that it was so humble and Spirit-filled. Thank you for your passion for the public schools and trying to redeem them for the glory of God. My husband and I feel very firmly that the best choice for our children will be to homeschool them, but I do appreciate your passion and purpose in your choice. Praise God!
