
For “Tasty Tuesday” at Balancing Beauty and Bedlam, I thought I’d share these Chicken Enchiladas that are delicious and so easy to make. (Remember… I don’t make anything that isn’t “easy”!) When I make them, I make several recipes and freeze the extras. Perfect to pull out of the freezer after a busy day, or after a day of play in the sun.
Oven: 375,
Makes 8-10
2 cups cooked, diced chicken
½ cup chopped onion
2 Tbs. butter
1 tsp. chili powder
1 (4oz) can chopped green chilies
3 cans cream of chicken soup
1 1/2 cups sour cream
2 (or more) ups shredded cheese, divided
8-10 flour tortillas
· In a 2 qt. saucepan, melt butter. When melted, add onions and chili powder. Cook until onions are tender.
· Stir together cream of chicken soup and sour cream. Set aside.
· When onions are done, add chilies and 1/3- 2/3 cup of soup mixture to the onions. Stir in chicken and 1 c up shredded cheese.
To make enchiladas:
Above the center of the tortilla, spread about ¼ cup of chicken mixture. Roll up, and place in a greased baking dish seam side down. Spread remaining soup mixture over enchiladas. Cover with foil. Bake 15 minutes. Sprinkle with remaining cheese. Bake uncovered for 5 minutes (until cheese melts). Let enchiladas sit for a few minutes before serving.
Great with salsa drizzled on top.
(If you freeze them, don’t put the soup/sour cream mixture on top. Wait until right before you bake it.)

Thanks for sharing. i just picked up a bunch of rotisserie chickens that were marked down and have the meat shredded in baggies. I will need to pull this one out.
