Easy, Summery Lemon Cookies

Mix cake mix, shortening, butter, and egg on medium speed for 2 minutes. Roll the dough into walnut sized balls, and place on a *cookie sheet 2 inches apart. Dip the bottom of a drinking glass in sugar and press the cookie flat. (Sprinkle additional sugar on top, if desired.) Bake 9-12 minutes or until the cookies are light brown around the edges. Cool and remove from cookie sheet.

I sometimes ice these with lemon frosting (from a can), and sometimes I sprinkle them with extra sugar or with colored sugar crystals.  Sometimes I do all three. 😉  However they are finished, they’re delicious!

Here is a great cookie frosting tip. I saw this on a can of frosting (I think). Take a can of vanilla or cream cheese frosting, and mix in 1 envelope unsweetened kool-aid powder. It makes pretty, tasty frosting. I have used the lemonade and pink lemonade. Tart and sweet. Great on vanilla cookies. or Lemon cookies.

2.  I’m heading to my hometown to speak at a Ladies’ event on Thursday night.  Would you please pray for me and for those who will hear the message?  I absolutely know that without the power and the presence and the leading of the Holy Spirit as I speak, we’d all be wasting our time.  I never agree to speak at an event unless the Lord has given me the “go ahead”.  So for Thursday night, I know that HE has a Word for those who are attending.  Will you join me in praying that God’s Word will go forth, and that everyone will hear it in a language they will understand? 

May God be glorified in all we do… presently specifically in those lemon cookies, that Smelling Coffee facebook page, and in Thursday night’s event!
