This is an old recipe from years ago that I dug out last week and made for the family. I had forgotten how delicious these muffins are. I made a batch of mix last week and we’ve been enjoying hot fresh muffins every morning. (The mix won’t last 6 weeks around here! – Even the batter is delicious! If I need for it to last a while, I double the recipe.)
6 Week Bran Muffins
15 oz box Raisin Bran Cereal
3 cups sugar
5 cups flour
5 t. baking soda
2 t. salt
4 eggs, beaten
1 cup vegetable oil
1 qt. buttermilk
1 t. nutmeg
1 t. cloves
1 t. cinnamon
Mix dry ingredients into a big bowl. Add liquid ingredients. Keep covered in refrigerator.
To bake muffins, fill muffin cups 1/2 full. (Batter is very thick.) Bake at 400 for 15-20 minutes. Will keep for 6 weeks in refrigerator.
(You can “healthy” these up by using wheat flour and Total Raisin Bran if you really want to.)

Hey Jen! This sounds SO yummy. But for the record I will not be using the "healthy" version!!! 🙂 Can't wait to try and I LOVE the fact that it can sit in the fridge to make any morning.
As crazy as it sounds…I love anything with bran in the title!! Sounds yummy – and with only two of us now…how great that I can make only as many as we need! Can't wait to try this 🙂
