Need a “quick-good-enough-to-serve-to-company” meal? Try this yummy Crock Pot dish. It doesn’t take but a few minutes to put together, and it serves up on the plate as a “fancy” entrée. Layer over rice, and add a side of seasoned green beans (I found a new way to serve them – I’ll post it below the Chicken recipe), add a fruit salad, and you have a home-cooked, but quick-to-put-together meal. (Which is how I like it!) This is not a new recipe – My mom used to make this, but I completely forgot about it until a few days ago, so I thought I would pass it along. 🙂
Crock Pot Chicken Breast Supreme
4 chicken breasts, halved
8 slices of bacon
1 jar of dried beef
1 can cream of mushroom soup
8 oz. of sour cream
Line bottom of Crock Pot with beef slices. Wrap each beast with bacon. Place in Crock pot. Mix soup and sour cream, and pour over chicken. Cook on slow for 8 hours. The gravy/ sauce created is delicious served over rice.
To double this recipe, make up the two recipes and just double stack them in the crock pot.
For the green beans, these were a happy accident, and now we make them at least once a week.
“Baked Green Beans”
- Frozen whole green beans (as many as you need)
- “Pam” or oil spray (I use an olive oil spray)
- garlic salt
Place frozen green beans on a baking sheet. Spray with oil and sprinkle with the garlic salt. Bake at 450 for about 10-15 minutes, depending on how crunchy you want them). We like them on the crunchy side. In fact, if I cook a pan of these for lunch, I’ll leave the leftovers out on the counter, and we will snack on them for the rest of the evening. (I did take a picture of these, but now I can’t find it.)
