It’s been a while since I have shared a recipe here. Well… actually, it’s been a while since I’ve cooked a “real” meal in the oven. (And…I might as well go on and confess: I didn’t cook this one either, but I did eat it. Does that count? haha) My mom made this new-to-us pork loin recipe the other day and it was so so so good! I will be watching for a sale on pork loin roasts and plan to make this asap. It’s delicious for a hot meal, and just as good the next day with a cold salad or in a sandwich {especially with a sweet relish condiment}.
Brown Sugar Dijon Glazed Pork Loin
- Large grain dijon mustard
- Brown sugar
- Salt and Pepper (or Paula Deen’s Seasoning, even better!)
- Pork Loin Roast
Trim the fat from the roast, leaving only a quarter inch of fat on the top. Season the roast with salt and pepper (we used Paula Deen’s seasoning) and open roast the pork on a rack in a 425 degree oven for 1/2 hour.
Brush the entire surface of the roast with the mustard, then press brown sugar over all. Return to the oven and reduce the heat to 375 degrees. Continue to roast until the internal temperature of the roast hits 175 degrees on a meat thermometer. Baste the roast in the “sauce” several times during the cooking time. Let rest for 10 minutes before carving and serving.
