The family came in one by one… only to remind me that the evening activities weren’t over. Nathan had praise band practice, Abigail had girls Bible study, and James was chauffeur de jour. They each had less than 30 minutes to shower, eat, and be out the door. I don’t know what I was thinking… I guess I thought that since I had the evening free, everyone else did too. Needless to say our pancake bar turned into my being a short order chef, slapping plain buttered pancakes on each plate, with a side of eggs and apples, and sitting for a whole 5 minutes together at the table. Oh well… such is the life with young teens… right?
But hey~ those pancakes were really delicious! And we enjoyed every hurried bite. So much so that I had to share this recipe. (They didn’t even need the chocolate chips or extra add ins that we usually do!) I found this recipe on AllRecipes.com and it’s definitely a keeper. The next time you want to plan a pancake bar, you’ll have to try this recipe… just make sure your family will be home to eat them! 😉
Good Old Fashioned Pancake Recipe (from allrecipes.com)
{This recipe is doubled to make about 16-18 pancakes}
3 cups all purpose flour
7 tsp baking powder
2 tsp salt
2 Tbs white sugar
2 tsp vanilla
2 1/2 – 3 cups milk
2 eggs
6 Tbs butter, melted
In a large mixing bowl, sift flour, baking powder, salt, and sugar. Make a well in the center of the dry mixture and pour in the milk, vanilla, eggs, and butter. Mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I love pancakes! My daughter and I sometimes have them on the nights when my husband has a game. There's just something comforting about them.
