7 cans of small peeled potatoes (don’t drain)
1 envelope onion soup mix
Salt, pepper, minced garlic to taste
3 chicken bullion cubes (dissolved in 1/3 c. water)
1 can of evaporated milk
1 stick of butter
2 lbs. of “Velveeta” type of cheese
Combine potatoes, onion soup mix and seasonings in large stock pot and bring to a boil over medium heat. Reduce heat, cover, and simmer for 15 minutes (or until potatoes are tender). Remove from heat. Do not drain. Mash potatoes in liquid until almost smooth. Add remaining ingredients. Stir until cheese is melted.
Soup is ready to serve, or may be kept on low in a crock pot for several hours. Add water if soup is too thick, and add mashed potato flakes if soup is too thin.
Optional: add a can of green chilies, OR several cans of sliced mushrooms along with the cheese.
Delicious served with shredded cheddar cheese, sour cream, green onions, and bacon bits.
This is such a favorite soup because everything needed to make it can be kept on hand in the pantry. It’s an easy “fall back” meal for any time, and it’s good enough to take to someone else as a ministry meal, or to serve to company. Hope you enjoy it too.

Hi everyone!!! Boy, have I missed you! I’ve been praying for you and am looking forward to the day when I can jump back into this blogging community with both feet. In fact, I’m about to burst at the seams with the long list of ideas for future blog posts. Apparently I don’t do “silence” very well. 🙂
The other day at Community Bible Study, Amy had the cutest snack treat for her core group – and I had to take a phone-picture of it and share her idea with you. (She’s been on a fantistic trip to Chicago, and couldn’t write about it herself.) ((I’m missing her Frappuccino Fun posts!))
Here’s what she had…. VALENTINE MIX!
Remember her Fall Mix? It’s much like that – except she used pink toned M&Ms and Candy Corns. Great idea, Amy!

That’s it! Mix and enjoy. 🙂 Pint or half pint jars of this mix tied with a pink or red ribbon would make a perfect teacher gift or friend gift. Like all of Amy’s ideas, the possibilities are unlimited.
And… while we’re talking about pint or half pint jars filled with Valentine goodies, here’s a recipe for a delicious hot tea that I make and give on Valentines Day, Christmas, or any other occasion lending itself to a cute jar of hot tea.
Friendship Tea
Ingredients:
2 ½ cups Tang
½ cup instant tea
1 ¼ tsp cinnamon
½ tsp cloves
½ cup lemonade mix
½ (or more) cups red hots
1 ½ cups white sugar
3 oz. apricot jello
Mix and store in airtight container. To make tea: Use three spoon fulls in a cup of hot water.

I’m still on my blogging break, but I just couldn’t stand it any longer!!! I just had to hop on here and say “hello”! You have been so sweet to comment on my last post, and to keep coming back – even when there’s nothing new here. 🙂
My husband’s jeep “died” last week and he’s been using my van – so between staying home without a vehicle to run around in, AND the blogging break…you wouldn’t believe how clean my house is, and how caught up the laundry is (and how little money I’ve spent lately)! It’s amazing! 🙂
The “forced rest” has been good for my soul! But I’m thinking that I’m going to be in need of some serious “shopping therapy” any day now… In fact, my hands are craving the feel of clothing on hangers as I pass through racks filled with possible outfits! Somebody get me to Khols or Goodwill SOON!!! 🙂
Seriously, I don’t mean to be so “secretive” about what God is doing in our lives right now – but I must stay quiet for a while longer. (We’re so thankful to God that our family is healthy, intact, and it’s not a marriage, job, health, or financial crisis.) God is working, and He has called us to join Him in a particular area – and that’s what we’re doing (and it’s taking some extra time and focus.)
In Genesis 24, Abraham’s servant tells Rebekah’s family an incredible truth – one that I want to be the testimony of every day of my life. In the Amplified, it says,
“The man bowed down his head and worshiped the Lord and said ‘Blessed be the Lord… As for me, going on the way of obedience and faith, the Lord led me’…” Gen. 24:26-27.
I love that. As for you and me – as we go on the way of obedience (to God’s every instruction – whether we understand all of the details or not), and faith (trusting in Who it is that we serve), He will lead us. Period! What a blessing to know, and what a challenge to live by!
That’s what I’m praying for you and for me… that we would go on the way of obedience and faith – so that the Lord will lead our every move. Then He will be glorified, and we will be at peace in Him!
