It’s called “Hurried Homemaker’s Pie”. We were given a box of fresh peaches last night, so right before dinner, James peeled a few peaches and I whipped up this easy cobbler recipe. It cooked while we ate our dinner, then we had fresh, hot peach cobbler for dessert. What a treat!
This recipe was given to me back in 1992 right after James and I were engaged. I was teaching 2nd grade in Cordova, TN, and my sweet room-moms gave me a collection of fast and tasty recipes. I still have and use those recipes. The student whose mom gave me this recipe was 7 when I taught him, and today, he’s around 26 – older than I was when I was his teacher! In my mind, he’s still a little boy ~ certainly not a man yet!
Anyway… here’s the deliciousness.
- 1/3 cup butter or margarine
- 1 cup sugar
- 1 cup self-rising flour (or plain flour + 1 Tbs baking powder & 1/4 tsp salt)
- 3/4 cup milk
- 3 1/2 cup canned peaches with syrup (or any fruit with syrup)
- OR what we did tonight: fresh peaches + a mixture of 3/4 cup water and 1/2 cup sugar
Melt butter in a casserole or cobbler dish. Combine sugar, flour, and milk to make a batter. Pour batter over melted butter and top with fruit and syrup. Bake at 350 for 30 minutes (45 if using fresh peaches). Batter will rise through fruit. Let batter brown lightly.
Serve alone, or with ice cream, or whipped cream on top. It is absolutely delicious!
Blessings to you today… As for the Walkers, we have 4 more days of “Summer” left. School starts for us this coming Monday. Nathan started high school football (helmet) practice today{which makes my heart stop beating only a little bit: high school. football. my newly freshman son out there with all of those bigger boys. playing on the defensive line with those big boys. getting tackled by those big boys…I’ll be doing a LOT of extra praying and deep breathing in the coming days, weeks, and months!}
We’ve bought school supplies, and are cleaning out closets and drawers this week getting organized for the upcoming year. It’s been the quickest summer of my life! I haven’t even had a chance to get a tan yet… except from a bottle… but that’s a post for another day… 😉
