These muffins are one of those things that signify the arrival of fall. No matter what the weather is, around our home you can know that it’s fall when we make the first pot of soup and the first batch of Chocolate Chip Pumpkin Muffins. Actually, we made our first batch this year during the first week of September. We had a few days of “under 90 degree” weather, and we knew that fall was on its way.
My sister passed this recipe on to me about 20 years ago. I think it was originally a Pumpkin bread recipe, and someone brilliantly added the chocolate chips. Then someone decided to make them into muffins. A star was born.
Chocolate Chip Pumpkin Muffins
1 2/3 cup flour
2 eggs
½ cup brown sugar1 cup pumpkin
½ cup white sugar½ cup butter
½ Tbs. pumpkin pie spice1 cup chocolate chips
½ Tbs. cinnamon
1 tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
Mix dry ingredients. Melt butter, then add eggs and pumpkin.Pour this mixture into dry ingredients and mix well.Add chocolate chips.Bake at 350 until done.(Don’t you just hate that? I say “until done” because it is different depending upon the size muffins you are making. I have faith that you’ll know when it’s done.)
This also bakes well in a loaf pan.

Last week, we discovered something that tasted almost exactly like these muffins, and it used only 3 indgredients.
Have you seen those cake recipes on Pinterest that use the box of cake mix and only one other ingredient? We tried the Spice cake/can of pumpkin recipe and threw in a cup of milk chocolate chips, and it was SO good. This recipe doesn’t produce as much as the ones with more ingredients, and is enough to make only 8-12 muffins, or one loaf pan, or one 8×8 square cake pan. But for something quick to keep in the pantry and to throw together at the last minute – it’s a winner!
Pinterest Inspired Chocolate Chip Pumpkin Quick Mix
1 Box Spice Cake Mix
1 Can of Pumpkin
1 Cup of Milk Chocolate Chips (or semi-sweet)
Mix all ingredients and place in the desired baking dish. Bake according to the temperature and length given in the cake mix directions.
It would be delicious drizzled with a warm caramel sauce, or served with vanilla ice cream, or a dollop of whipped cream. We were very pleased with this easy cake and will definitely keep these ingredients on hand. And it was a wonderful companion to a cup of coffee the next morning. 🙂
